Questions about Booch

From how it's made to who can drink it, sugar, caffeine, refrigeration, and more — straight from the Booch team.

Kombucha is always made from a sweet tea that’s been fermented by a SCOBY.

This SCOBY (symbiotic colony of bacteria and yeast) is what makes kombucha unique.

After fermenting the sweet tea with the SCOBY in a clean and controlled environment, almost all of the sugar is gone.

Rather than leaving behind an alcoholic brew, the bacteria eat the alcohol to leave behind probiotics, amino acids, and healthy vitamins.

You must keep Booch chilled at all times to prevent further fermentation, like a fresh juice.

Anyone over the age of 1 can drink Booch. If you have a medical condition, speak to your doctor about kombucha, or feel free to reach out to us for medical journal articles.

If you’re pregnant or breastfeeding, we recommend you speak with your doctor.

That being said, we know a lot of women who drink Booch throughout pregnancy and breastfeeding.

Kombucha’s culturing process leaves behind a tasty beverage that contains healthy acids and a wide range of probiotics.

Probiotics are the good bacteria that we need to have a healthy gut. Gut health is linked to mental health, mood, and the immune system. Did you know that 70% of our immune system lives in our gut?

Acids are important for the first stage of digestion — in our stomachs. A healthy digestive fire promotes efficiency and maximal nutrition absorption. Despite its acidic flavor, kombucha can also help treat ulcers by regulating the amount of acid your stomach releases.

Most of the sweetness you taste in Booch comes from the fresh fruit and botanicals.

Booch has 75% less sugar than soda or juice.

Booch has about 1/4 the amount of sugar of a soda, and about 1/3 the amount of sugar compared to juice (~10g).

We make kombucha with Oolong tea (a Kenyan black tea processed in a Chinese style).

A lot of the caffeine is eaten during the first fermentation process.

A little remains in the final product — about 12 mg / 100 ml.

That’s about ½ the caffeine of black tea (20 mg), and about 1/3 the caffeine of Coca-Cola or most energy drinks (36 mg).

Booch has a little caffeine, about the same as ½ a cup of black tea.

We’ve heard stories of customers whose ulcers reduced over time after drinking Booch, and those who said they felt better drinking Booch.

Because Booch is slightly acidic, it can help your stomach from over-producing acid, which irritates and causes ulcers.

Our fresh Booch is not very fizzy!

Fresh Booch is not very fizzy because we filter out active yeast strands before bottling.

A little fizz is totally normal.

If you have a very fizzy Booch, please check your chiller! Booch should be stored below 5°C to prevent additional fermentation in the bottle.

We recommend one in the morning, especially to help liver function / detox — or in the afternoon for a light pick-me-up instead of that third cup of coffee.

Yes, it does. Refrigeration slows down the fermentation process.

When refrigerated it has a shelf life of around 2 months (about 60 days). If not refrigerated, fermentation continues until zero sugars remain.

Although it won’t become bad for you, it will just get more acidic/vinegary, more alcoholic, and the carbonation will also continue to increase.

If you boil it, you’ll kill the probiotics that make Booch healthy! You can take it at room temperature if you’d like.

Just don’t leave it out of the fridge overnight or it will start to ferment like a fresh juice.

Yes! It’s been made for over 2000 years, with traditions in East Asia.

Kombucha, like a lot of fermented foods, has a long legacy in many cultures.

Unlike yogurt, kombucha has many more varieties of probiotics because of its open fermentation process.

There are some studies ongoing that it can help your metabolism.

We use premium Kenyan ingredients and no artificial flavorings. This all-natural drink is a bit more expensive than syrups and soft drinks, but roughly the same cost as a latte or coffee — and a great alternative.

Yes! And the acid helps ensure no bad bacteria are in there — only the good guys.

Bad bacteria can’t grow in a super acidic environment, which is why our body likes kombucha!

It supports your gut health, which houses 70% of your immune system — so it helps deploy your immune system to fight off bad guys.

We use a syrup imported from Europe — our only non-fruit-based flavor.
